While not the absolute best cocoa I've used, Ghiradelli is one of the finest that is readily available. I recommend using it as a matter of course instead of the ubiquitous Hershey's, which has a harsher flavor. This cocoa is mild yet rich in flavor, smooth tasting. I use it all the time for baking, and people notice the difference, even if they don't understand why my brownies are better than average.
